The Shortbread Society is the brainchild of Christine Legge and her husband Francis, better known as Chef Scottish Francis. Together, the power couple and firm LGBTQ+ allies have turned a humble Scottish tradition into a decadent dessert experience.
The meaning of Pride is personal for these two strong allies. “We don’t just celebrate Pride in June,” Christine says. “We’ve been part of the community since we were kids.”
Long before the brand became a household name, they were quietly doing pop-ups at the Stonewall Inn – slipping in with trays of rainbow shortbread on Thursday afternoons and connecting with customers one slice at a time. These connections helped shape both their brand and their values.
Born and raised in Scotland, MasterChef alum Francis learned to make traditional shortbread from his grandmother when he was only five. That original family recipe still forms the foundation of every tray they bake. “We’re not just baking cookies,” Francis says. “We’re creating dessert experiences.”
